Balsamic Roasted Beets

If you haven't given beets a try for a while you may be surprised how good they are AND how good they are for you! Beets are little powerhouses of nutrients with B vitamins, manganese, vitamins A & C, calcium, potassium, magnesium, phosphorous, zinc, copper, selenium and betaine which helps detoxification. Try roasting these alongside a chicken for a delicious side dish. Save leftovers for your salad at lunch.

Ingredients
  

  • 6-8 medium beets, quartered
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon coconut oil, melted
  • 1/4 teaspoon sea salt

Instructions
 

  • Preheat oven to 350F.
  • Combine the beets, vinegar, coconut oil, and salt. Pour into a baking dish a cover with lid.
  • Bake for 45 minutes to 1 hour, until the beets are tender.

Notes

If you purchased your beets with the greens don't throw them away! Clean and chop the greens, boil them in water and serve with sea salt and butter. Beet greens are exceptionally good for your liver's detoxification pathways.
