These are my daughter’s FAVORITE cookies! She whips them up in about 10 minutes and they vanish before I can get them in her lunchbox.

Almond Flour Chocolate Chip Cookies

Ingredients
  

  • 2 cups Almond flour
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/4 cup Organic shortening, melted (or coconut oil)
  • 3 tablespoons maple syrup
  • 3/4 teaspoon Almond extract (we use Enjoy Life)
  • 1/2 cup Dark chocolate chips (we use Enjoy Life)

Instructions
 

  • Preheat oven to 350 degrees F and line cookie sheets with unbleached parchment paper.
  • Wisk together dry ingredients (except chocolate chips) in a small bowl.
  • Wisk wet ingredients in a separate, larger bowl.
  • Add dry to wet ingredients and combine.
  • Fold in the chocolate chips.
  • Use a small cookie scoop (or overfilled tablespoon) to drop cookies on pan. Use a fork to flatten.
  • Bake for 12 minutes or until lightly golden brown. Be sure to allow cookies to cool before moving them from the pan. These keep for about a week.
