These can be made at the beginning of the week and refrigerated for a quick breakfast or healthy snack.

Egg Muffin

Ingredients
  

  • 9 eggs
  • 1 1/2 Tbsp. coconut oil
  • 3 Tbsp. coconut milk
  • 1 1/2 Tbsp. coconut flour
  • 1/4 tsp. baking soda
  • 1 pinch sea salt

Instructions
 

  • Mix ingredients together and add in: • Apple streusel: sauté 3 chopped green apples in 3 Tbl water with 2 tsp cinnamon until consistency of pie filling. Add to egg mixture. Or... • Veggie muffins – chopped broccoli, or vegetables of choice. Add to egg mixture. Spoon into lined muffin tins, ¼ cup each. Bake at 350 for about 40 minutes. Experiment with your own favorite mix-ins.
