Overnight Oats – Make these before bed for a quick and healthy breakfast in the morning.

Overnight Chocolate Chia Pudding

Ingredients
  

  • 1 small banana ripe
  • 2 Tbsp. cacao powder
  • 2 Tbsp. sweetener honey, coconut sugar or maple syrup, optional
  • 2 Tbsp. water
  • 1/2 cup rolled oats whole, not instant
  • 3 Tbsp. chia seeds
  • 1 1/2 cups full-fat coconut milk

Instructions
 

  • In a small bowl, mash together the banana, cacao, sweetener (if using) and water. Stir in the oats, chia and finally the coconut milk and stir until fully combined. Cover bowl and refrigerate overnight (or store in two Mason jars if you want it to be portable). Can be eaten cold or warmed over low heat in a saucepan for about 5 minutes. Add some extra liquid to your desired consistency. Top with fresh berries and chopped nuts.
